Hi Drew, thank you for submitting feedback to the ideas portal.
In LOB Analytics there should be an option to configure the data range of your dashboard or widget for "last 7 days to date" as well as set a custom range.
If you are looking to only report on data at the start of the week until when the report is viewed, we are aware of this request and it is in our development backlog.
